Pressed and cold settled for 24 hours in stainless steel. Racked to neutral oak for a slow 24 day fermentation before the fermentation was stopped with some residual sugar.
Matured in oak for 6 months on full ferment lees.
Lime + lemon zest + elderflower + honey suckle + minerality.
