100% single vineyard Pinot Noir from Orange, NSW.

 

25% whole bunch + 75% destemmed. Fermented in open concrete for 14 days, pumped over lightly once a day and twice during the ferment's peak. Pressed to stainless steel to finish malolactic fermentation before being racked to neutral oak.

Matured in oak for 6 months.

Bright fruit + cherries  + raspberry + forest floor + rose water.
